You can create a Grey Balance setting and then have your new setting be applied to all shots, new or old. Your custom Grey Balance setting does not have to be from a newly captured shot, but can be from any shot - one you just shot this second or one from an older MOS file.

You can create multiple Grey Balance settings and place them in the Image Settings Menu and use them whenever you need to.
